Rhian Jones has no problems keeping on the right side of the law if her cake creations are anything to go by, for she’s been supplying North Wales Constabulary’s Head Office at Colwyn Bay from her bakery, Popty Penrhos, since she gave up her position as assistant catering manager there to run her business full-time in May 2005. “It was quite a big decision, to give up a regular, monthly salary, to concentrate on my business,” explains Rhian, “but I’m so glad I did. I love the independence I now have although it’s been far more work than I imagined.

Trained at Rhyl College, Rhian first got a job as catering assistant at

Penrhos Independent Girls School where she rose quickly through the ranks to become the school’s Head Cook. After the school’s closure Rhian had already begun to consider running her own business as she was asked more and more by friends to create her exquisitely decorated celebration cakes.

Previously operating from a compact but immaculate custom built kitchen at her home in Llanelian, Rhian has now moved the short distance to a new purpose built commercial kitchen in the bustling village of Betws yn Rhos. In the shadow of the village’s twin spired church of St Michaels she whisks up a luscious array of cakes from battenburg and bara brith to victoria sponge. With orders from hotels, delicatessens and cafes as far away as Beaumaris, Caernarfon and including Bodelwyddan Castle, her range has now expanded to include many desserts and some buffets. “Most of my new customers come to me either through referrals or I’ve called in to see them on spec. I usually take some samples for them to try and that seems to be enough to convince them without me doing too much talking!

For Rhian really knows her cakes. For many years now she’s been a regular sight judging the cake competitions at the Meirionydd County Show, the Llanrwst Show and the Harlech Horticultural Show.
 

Appearing at the Denbigh Gwaenynog County Show, the Conwy Food Festival and the Conwy Farmers Market, Rhian’ s move to bigger premises has allowed her to sell more of her produce directly. So, if she can find enough hours in the day, no doubt we’ll be seeing a lot more of Rhian.
